Creamy Tuscan salmon is a flavorful dinner featuring tender salmon fillets in a rich sauce made with garlic, cream, Parmesan, spinach, and sun-dried tomatoes. The combination of delicate fish and savory Mediterranean-inspired ingredients creates a meal that is both comforting and elegant. It is an excellent recipe for a special dinner, yet simple enough to prepare on a busy evening.
Ingredients
- 2 salmon fillets, approximately 150–180 g each
- 200 ml cooking cream
- 50 g grated Parmesan cheese
- 6 sun-dried tomatoes, chopped
- 2 garlic cloves, minced
- 2 handfuls fresh spinach
- 1 tbsp olive oil
- ½ tsp paprika
- Salt and black pepper
- 1 tbsp chopped fresh parsley
- Lemon wedges for serving
Instructions
- Pat the salmon fillets dry and season both sides with paprika, salt, and black pepper.
- Heat olive oil in a skillet over medium-high heat. Sear the salmon for approximately 3–4 minutes per side, depending on thickness. Remove and set aside.
- Reduce the heat and sauté the garlic for about 30 seconds. Add the sun-dried tomatoes and stir to release their flavor.
- Pour in the cooking cream and add the Parmesan. Stir gently until the cheese melts and the sauce becomes smooth.
- Add the spinach and cook until wilted. Return the salmon to the pan and simmer gently until the fish reaches 63°C internally.
- Spoon the sauce over the fillets, garnish with parsley, and serve with lemon wedges.
Serving tip: This dish pairs beautifully with tagliatelle, mashed potatoes, or steamed rice. Add a little pasta water to the sauce if you want a silkier consistency.
