Gluten-Free Lemon Bars

Ingredients:

  • 1 cup gluten-free flour
  • 1/2 cup powdered sugar
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 2 tbsp gluten-free flour
  • 1/2 tsp baking powder
  • 3 eggs
  • 1/3 cup lemon juice

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Mix 1 cup flour, powdered sugar, and butter until crumbly. Press into a baking dish.
  3. Bake for 15-20 minutes until lightly browned.
  4. In a bowl, whisk granulated sugar, 2 tbsp flour, baking powder, eggs, and lemon juice.
  5. Pour over the baked crust.
  6. Bake for another 20-25 minutes until set.
  7. Cool and dust with powdered sugar before cutting into bars.
