Ingredients:
- 4 chicken thighs, bone-in and skin-on
- 1 bell pepper, sliced
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1 cup marinara sauce (no sugar added)
- 1/2 cup chicken broth
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat oven to 375°F (190°C).
- In a large oven-safe skillet, brown chicken thighs on both sides. Remove and set aside.
- In the same skillet, sauté onion, bell pepper, and garlic until softened.
- Add marinara sauce, chicken broth, oregano, basil, salt, and pepper. Stir to combine.
- Return chicken thighs to the skillet, skin-side up.
- Transfer the skillet to the oven and bake for 30-35 minutes until the chicken is cooked through.
- Garnish with fresh parsley and serve.
