Ingredients:
- 1 cup gluten-free flour
- 1/2 cup powdered sugar
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 2 tbsp gluten-free flour
- 1/2 tsp baking powder
- 3 eggs
- 1/3 cup lemon juice
Instructions:
- Preheat oven to 350°F (175°C).
- Mix 1 cup flour, powdered sugar, and butter until crumbly. Press into a baking dish.
- Bake for 15-20 minutes until lightly browned.
- In a bowl, whisk granulated sugar, 2 tbsp flour, baking powder, eggs, and lemon juice.
- Pour over the baked crust.
- Bake for another 20-25 minutes until set.
- Cool and dust with powdered sugar before cutting into bars.
