Here’s a delightful recipe for Zucchini Noodles with Pesto:

Ingredients:

  • 4 medium zucchinis
  • 1 cup fresh basil leaves
  • 1/4 cup pine nuts (or walnuts)
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic
  • 1/2 cup olive oil
  • Salt and pepper to taste
  • Cherry tomatoes (optional, for garnish)

Instructions:

  1. Make the Zucchini Noodles:
    • Use a spiralizer or a julienne peeler to create zucchini noodles (zoodles) from the zucchinis. Set aside.
  2. Prepare the Pesto:
    • In a food processor or blender, combine the basil leaves, pine nuts, Parmesan cheese, and garlic. Pulse until the ingredients are finely chopped.
    • With the food processor running, slowly pour in the olive oil and blend until smooth.
    • Season with salt and pepper to taste.
  3. Cook the Zoodles:
    • In a large skillet, heat a small amount of olive oil over medium heat.
    • Add the zucchini noodles and sauté for 2-3 minutes, just until they are slightly tender. Be careful not to overcook, as they can become mushy.
  4. Combine the Zoodles and Pesto:
    • Remove the skillet from the heat and toss the zucchini noodles with the prepared pesto until well coated.
  5. Serve:
    • Transfer the zucchini noodles with pesto to serving plates.
    • Garnish with cherry tomatoes and additional Parmesan cheese if desired.
