Ingredients:
- 1 cup quinoa, cooked
- 1 can chickpeas, drained and rinsed
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 cup baby spinach
- 2 tbsp tahini
- 1 tbsp lemon juice
- 1 clove garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Prepare the quinoa according to package instructions.
- Arrange quinoa, chickpeas, avocado, cherry tomatoes, cucumber, and spinach in a bowl.
- In a small bowl, whisk together tahini, lemon juice, garlic, olive oil, salt, and pepper.
- Drizzle the dressing over the Buddha bowl.
- Serve immediately.
