Veggie-Packed Buddha Bowl

Ingredients:

  • 1 cup quinoa, cooked
  • 1 can chickpeas, drained and rinsed
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 cup baby spinach
  • 2 tbsp tahini
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Prepare the quinoa according to package instructions.
  2. Arrange quinoa, chickpeas, avocado, cherry tomatoes, cucumber, and spinach in a bowl.
  3. In a small bowl, whisk together tahini, lemon juice, garlic, olive oil, salt, and pepper.
  4. Drizzle the dressing over the Buddha bowl.
  5. Serve immediately.
