Here’s a simple and delicious recipe for a Vegetable Hummus Wrap:

Ingredients:

  • 1 large whole wheat tortilla or wrap
  • 3-4 tablespoons of hummus (store-bought or homemade)
  • 1 small carrot, julienned
  • 1/2 cucumber, thinly sliced
  • 1/4 red bell pepper, thinly sliced
  • 1/4 yellow bell pepper, thinly sliced
  • 1/4 cup shredded lettuce or spinach
  • 2-3 slices of avocado
  • 1 small tomato, thinly sliced
  • 2 tablespoons crumbled feta cheese (optional)
  • 1 teaspoon olive oil (optional)
  • Salt and pepper to taste

Instructions:

  1. Prepare the Tortilla:
    • Warm the tortilla in a dry pan for about 30 seconds on each side to make it more pliable.
  2. Spread the Hummus:
    • Place the tortilla on a flat surface and spread an even layer of hummus across the center.
  3. Add the Vegetables:
    • Arrange the carrot, cucumber, red and yellow bell peppers, lettuce or spinach, avocado slices, and tomato slices on top of the hummus.
