Vegan Tofu Stir-Fry

A vegan tofu stir-fry is a versatile and delicious dish that’s easy to prepare and packed with flavor. Here’s a simple recipe for making a tasty vegan tofu stir-fry:

Ingredients:

  • 1 block (14 ounces) firm or extra-firm tofu, pressed and cubed
  • 2 tablespoons soy sauce or tamari (for gluten-free)
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil (divided)
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned or thinly sliced
  • 1 broccoli crown, cut into small florets
  • 1 cup snap peas or snow peas
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 3-4 green onions, chopped
  • Cooked rice or noodles for serving
  • Sesame seeds and chopped fresh cilantro for garnish (optional)

For the Stir-Fry Sauce:

  • 1/4 cup soy sauce or tamari
  • 2 tablespoons hoisin sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon maple syrup or agave nectar
  • 1 teaspoon cornstarch (to thicken the sauce)

Instructions:

  1. Prepare the Tofu: Press the tofu to remove excess moisture, then cut it into cubes. In a bowl, toss the tofu cubes with 2 tablespoons soy sauce and 1 tablespoon cornstarch until evenly coated.
  2. Cook the Tofu: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu cubes and cook until golden and crispy on all sides, about 6-8 minutes. Remove from the skillet and set aside.
  3. Prepare the Stir-Fry Sauce: In a small bowl, whisk together all the sauce ingredients until well combined. Set aside.
  4. Cook the Vegetables: In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the garlic and ginger and sauté for about 30 seconds until fragrant. Add the bell pepper, carrot, broccoli, and snap peas. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
  5. Combine Everything: Return the cooked tofu to the skillet. Pour the stir-fry sauce over the tofu and vegetables. Stir well to combine, cooking for an additional 2-3 minutes until everything is heated through and the sauce has thickened.
  6. Serve: Serve the tofu stir-fry over cooked rice or noodles. Garnish with sesame seeds and chopped fresh cilantro, if desired.

Tips:

  • Tofu: Pressing the tofu removes excess water, allowing it to absorb more flavor and become crispier when cooked. A tofu press or wrapping the tofu in a clean towel and placing a heavy object on top works well.
  • Vegetables: Feel free to use any vegetables you like or have on hand, such as mushrooms, zucchini, or baby corn.
  • Sauce: Adjust the sauce to your taste by adding more soy sauce for saltiness, more maple syrup for sweetness, or more rice vinegar for tanginess.
