Ingredients:

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) diced tomatoes
  • 2 cups vegetable broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (optional, adjust to taste)
  • Salt and pepper, to taste
  • 1 cup frozen corn kernels
  • 1 tablespoon soy sauce or tamari (for gluten-free)
  • 1 tablespoon maple syrup or agave nectar
  • Juice of 1 lime

Optional Toppings:

  • Fresh cilantro, chopped
  • Sliced avocado
  • Diced red onion
  • Vegan sour cream
  • Tortilla chips
  • Lime wedges

Instructions:

  1. Prepare the Vegetables:
    • Heat the olive oil in a large pot over medium heat.
    • Add the diced onion, bell peppers, carrots, and celery. Sauté for about 7-10 minutes, until the vegetables are softened.
  2. Add Garlic and Spices:
    • Add the minced garlic, chili powder, ground cumin, smoked paprika, dried oregano, and cayenne pepper (if using) to the pot. Cook for 1-2 minutes, stirring constantly, until fragrant.
