Ingredients:
- 1 large spaghetti squash
- 2 cups marinara sauce (homemade or store-bought)
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
- Grated parmesan cheese (optional)
How to Prepare:
- Preheat oven to 400°F (200°C). Cut spaghetti squash in half lengthwise and remove seeds. Brush with olive oil, salt, and pepper. Place cut-side down on a baking sheet and bake for 40-45 minutes.
- In a saucepan, heat olive oil over medium heat. Add onion and garlic, sauté until translucent. Add marinara sauce and simmer for 10 minutes.
- Scrape the flesh of the baked squash with a fork to create spaghetti-like strands. Place in a serving bowl.
- Pour marinara sauce over the spaghetti squash and toss to combine. Garnish with fresh basil and parmesan cheese if desired.
