Ingredients:

  • 12 oz spaghetti
  • 1/2 cup extra virgin olive oil
  • 8 cloves garlic, thinly sliced
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, zested and juiced (optional)
  • Vegan Parmesan cheese, for serving (optional)

Instructions:

  1. Cook the Spaghetti:
    • Bring a large pot of salted water to a boil.
    • Add the spaghetti and cook according to the package instructions until al dente.
    • Reserve 1 cup of pasta cooking water, then drain the pasta.
  2. Prepare the Aglio e Olio Sauce:
    • While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
    • Add the sliced garlic and cook, stirring frequently, until the garlic is golden and fragrant, about 2-3 minutes. Be careful not to burn the garlic as it can turn bitter.
    • Add the red pepper flakes and cook for another 30 seconds.
  3. Combine Pasta and Sauce:
    • Add the drained spaghetti to the skillet with the garlic oil.
    • Toss to coat the pasta evenly with the oil and garlic mixture.
    • If the pasta seems dry, add some of the reserved pasta cooking water, a little at a time, until the desired consistency is reached.
  4. Season and Garnish:
    • Season with salt and freshly ground black pepper to taste.
    • Stir in the chopped parsley and lemon zest and juice, if using.
    • Toss everything together until well combined and heated through.
  5. Serve:
    • Divide the Spaghetti Aglio e Olio among serving plates.
    • Top with vegan Parmesan cheese, if desired.
