Ingredients:

  • 8 oz linguine or spaghetti
  • 1 lb large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup dry white wine or chicken broth
  • Juice of 1 lemon (about 2 tablespoons)
  • Zest of 1 lemon
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Add the linguine or spaghetti and cook according to package instructions until al dente.
    • Drain the pasta, reserving about 1/2 cup of the pasta water.
  2. Cook the Shrimp:
    • While the pasta is cooking, heat 2 tablespoons of olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.
    • Add the shrimp in a single layer, season with salt and pepper, and cook for about 2 minutes per side, until pink and opaque.
    • Remove the shrimp from the skillet and set aside.
  3. Make the Sauce:
    • In the same skillet, add the remaining 1 tablespoon of olive oil and 2 tablespoons of butter.
    • Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute, until fragrant.
    • Pour in the white wine or chicken broth and bring to a simmer.
    • Let it cook for about 2 minutes, until the liquid is reduced by half.
    • Stir in the lemon juice and lemon zest.
  4. Combine Pasta and Shrimp:
    • Add the cooked pasta to the skillet and toss to coat in the sauce.
    • If the pasta seems dry, add some of the reserved pasta water a little at a time until you reach the desired consistency.
    • Return the cooked shrimp to the skillet and toss to combine.
    • Stir in the chopped parsley and season with additional salt and pepper if needed.
  5. Serve:
    • Divide the Shrimp Scampi Pasta among serving plates.
    • Garnish with additional chopped parsley and grated Parmesan cheese if desired.
    • Serve immediately.

Tips:

  • For extra richness, you can add a splash of heavy cream to the sauce.
  • For a burst of color and flavor, you can add cherry tomatoes to the skillet along with the shrimp.
