Ingredients:

  • 1 cup quinoa
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • Salt and pepper to taste

For the Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon red wine vinegar
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. Cook the Quinoa:
    • Rinse the quinoa under cold water.
    • In a medium saucepan, combine the quinoa with 2 cups of water.
    • Bring to a boil, then reduce the heat, cover, and simmer for about 15 minutes or until the water is absorbed and the quinoa is tender.
    • Fluff with a fork and let it cool.

    • Pour the dressing over the salad and toss to combine.
    • If using, sprinkle the crumbled feta cheese on top.
    • Season with additional salt and pepper to taste.
