How to Prepare:
- Rinse quinoa under cold water. Cook in vegetable broth according to package instructions.
- Heat olive oil in a large pan over medium-high heat. Add onion and garlic, sauté until fragrant.
- Add bell pepper, zucchini, broccoli, and carrot. Stir-fry until tender-crisp.
- Mix in the cooked quinoa and soy sauce. Stir well to combine.
- Season with salt and pepper. Garnish with sesame seeds before serving.
