Quinoa and Vegetable Stir-Fry

Ingredients:

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tbsp olive oil
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp sesame seeds
  • Salt and pepper to taste

How to Prepare:

  1. Rinse quinoa under cold water. Cook in vegetable broth according to package instructions.
  2. Heat olive oil in a large pan over medium-high heat. Add onion and garlic, sauté until fragrant.
  3. Add bell pepper, zucchini, broccoli, and carrot. Stir-fry until tender-crisp.
  4. Mix in the cooked quinoa and soy sauce. Stir well to combine.
  5. Season with salt and pepper. Garnish with sesame seeds before serving.
