Ingredients:
- 4 cod fillets
- 1 pint cherry tomatoes, halved
- 1 red onion, thinly sliced
- 1/4 cup kalamata olives, pitted and sliced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 lemon, juiced
- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
How to Prepare:
- Preheat oven to 400°F (200°C).
- Place cod fillets in a baking dish. Scatter cherry tomatoes, red onion, and olives around the fish.
- In a small bowl, mix garlic, olive oil, lemon juice, salt, and pepper. Pour over the fish and vegetables.
- Bake for 20-25 minutes until the fish flakes easily with a fork.
- Garnish with fresh parsley before serving.
