Mediterranean Baked Cod

Ingredients:

  • 4 cod fillets
  • 1 pint cherry tomatoes, halved
  • 1 red onion, thinly sliced
  • 1/4 cup kalamata olives, pitted and sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 lemon, juiced
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

How to Prepare:

  1. Preheat oven to 400°F (200°C).
  2. Place cod fillets in a baking dish. Scatter cherry tomatoes, red onion, and olives around the fish.
  3. In a small bowl, mix garlic, olive oil, lemon juice, salt, and pepper. Pour over the fish and vegetables.
  4. Bake for 20-25 minutes until the fish flakes easily with a fork.
  5. Garnish with fresh parsley before serving.
