Ingredients:
- 2 large zucchinis, sliced lengthwise into thin strips
- 1 lb ground beef
- 1 cup marinara sauce (no sugar added)
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 egg
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions:
- Preheat oven to 375°F (190°C).
- In a skillet, cook ground beef and garlic until browned. Drain excess fat and add marinara sauce. Simmer for 5 minutes.
- In a bowl, mix ricotta cheese, Parmesan cheese, egg, oregano, salt, and pepper.
- In a baking dish, layer zucchini slices, meat sauce, and ricotta mixture. Repeat layers, ending with mozzarella cheese on top.
- Bake for 30-40 minutes until bubbly and golden.
- Let rest for 10 minutes before serving.
