Keto Cauliflower Fried Rice

Ingredients:

  • 1 head cauliflower, riced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup mixed vegetables (e.g., peas, carrots, bell pepper)
  • 2 eggs, beaten
  • 2 tbsp soy sauce (gluten-free if needed)
  • 1 tsp sesame oil
  • Green onions, chopped (for garnish)

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Sauté garlic and onion until fragrant.
  3. Add mixed vegetables and cook until tender.
  4. Push vegetables to the side and scramble the eggs in the same skillet.
  5. Stir in riced cauliflower, soy sauce, and sesame oil, cooking until the cauliflower is tender.
  6. Garnish with green onions and serve.
