Keto Beef Stroganoff

Ingredients:

  • 1 lb beef sirloin, thinly sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup beef broth
  • 1/2 cup sour cream
  • 1 tsp Dijon mustard
  • 2 tbsp butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large skillet, melt butter over medium heat and sauté onions and garlic until translucent.
  2. Add mushrooms and cook until tender.
  3. Add beef slices and cook until browned.
  4. Pour in beef broth, bring to a simmer, and cook for 10 minutes.
  5. Stir in sour cream and Dijon mustard until well combined.
  6. Season with salt and pepper, garnish with parsley, and serve over zucchini noodles or cauliflower rice.
