Here’s a flavorful recipe for Curried Tofu with Spinach:

Ingredients:

  • 14 oz (400g) extra-firm tofu, drained and pressed
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1 can (14 oz / 400g) diced tomatoes
  • 1 cup (240ml) vegetable broth
  • 5 cups (about 200g) fresh spinach leaves, washed and chopped
  • Salt and pepper to taste
  • Cooked rice or naan bread, for serving

Instructions:

  1. Prepare the Tofu:
    • Cut the pressed tofu into cubes or strips, according to your preference.
  2. Cook the Tofu:
    • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the tofu cubes and cook until they are golden brown on all sides. Remove the tofu from the skillet and set aside.
  3. Make the Curry:
    • In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and cook until softened, about 3-4 minutes.
    • Add the minced garlic and grated ginger, and cook for another 1-2 minutes until fragrant.
  4. Add Spices:
    • Stir in the curry powder, ground cumin, ground coriander, turmeric powder, and cayenne pepper (if using). Cook for 1 minute, stirring constantly to toast the spices.
  5. Add Tomatoes and Broth:
    • Pour in the diced tomatoes (with their juices) and vegetable broth. Stir to combine, scraping up any browned bits from the bottom of the skillet.
  6. Simmer:
    • Bring the curry sauce to a simmer and let it cook for about 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  7. Add Spinach and Tofu:
    • Once the sauce has thickened, add the chopped spinach and cooked tofu to the skillet. Stir gently to coat the tofu and spinach in the curry sauce.
  8. Finish and Serve:
    • Cook for an additional 2-3 minutes, or until the spinach has wilted and the tofu is heated through.
    • Season with salt and pepper to taste.
    • Serve the curried tofu with spinach over cooked rice or with naan bread on the side.
