Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
For the Dressing:
- 1/4 cup olive oil
- Juice of 1 lemon
- 1 clove garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions:
- In a medium saucepan, bring the quinoa and water to a boil. Reduce the heat, cover, and simmer for about 15 minutes, or until the quinoa is cooked and the water is absorbed. Let it cool slightly.
