Gluten-Free Pad Thai

Ingredients:

  • 8 oz (225g) rice noodles
  • 1 lb (450g) chicken breast, thinly sliced
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 2 large eggs, beaten
  • 1 cup bean sprouts
  • 1/4 cup green onions, chopped
  • 1/4 cup roasted peanuts, chopped
  • 2 tablespoons fresh lime juice
  • 3 tablespoons gluten-free soy sauce
  • 2 tablespoons fish sauce (gluten-free)
  • 1 tablespoon brown sugar
  • 1/2 teaspoon red pepper flakes (optional)

Instructions:

  1. Prepare the Noodles: Cook the rice noodles according to package instructions. Drain and set aside.
  2. Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the thinly sliced chicken and cook until no longer pink. Remove from the skillet and set aside.
  3. Cook the Eggs: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and cook for 1 minute. Pour in the beaten eggs and scramble until cooked through.
  4. Combine and Serve: Add the cooked noodles, chicken, bean sprouts, green onions, and peanuts to the skillet. Pour in the lime juice, soy sauce, fish sauce, brown sugar, and red pepper flakes. Toss to combine and heat through. Serve hot with lime wedges.
