Classic Vanilla Cupcakes Recipe

Ingredients:

For the cupcakes:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup whole milk

For the vanilla buttercream frosting:

  • 1 cup unsalted butter, softened
  • 3-4 cups powdered sugar, sifted
  • 2 teaspoons vanilla extract
  • 2-3 tablespoons heavy cream or whole milk
  • Pinch of salt

Instructions:

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Prepare the cupcake batter:
    • In a medium bowl, whisk together the flour, baking powder, and salt.
    • In a large bowl, using an electric mixer, beat the butter and sugar together on medium speed until light and fluffy, about 2-3 minutes.
    • Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
    • With the mixer on low speed, add the dry ingredients to the butter mixture in three parts, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
  3. Bake the cupcakes:
    • Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
    • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
    • Allow the cupcakes to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  4. Prepare the buttercream frosting:
    • In a large bowl, using an electric mixer, beat the softened butter on medium speed until creamy, about 1-2 minutes.
    • Gradually add the sifted powdered sugar, 1 cup at a time, mixing on low speed until combined. Scrape down the sides and bottom of the bowl as needed.
    • Add the vanilla extract, heavy cream or milk, and a pinch of salt. Beat on high speed for 3 minutes until the frosting is light and fluffy. Add more powdered sugar if the frosting is too thin or more cream/milk if it’s too thick.
  5. Frost the cupcakes:
    • Once the cupcakes are completely cool, use a piping bag fitted with your favorite tip to frost the cupcakes. You can also use a knife or offset spatula to spread the frosting on top.
  6. Serve and enjoy:
