Here’s a simple and elegant recipe for Caprese Skewers:

Ingredients:

  • 1 pint cherry tomatoes
  • 1 (8 oz) package fresh mozzarella balls (bocconcini or ciliegine)
  • 1 bunch fresh basil leaves
  • 2 tablespoons balsamic glaze (store-bought or homemade)
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • Wooden or bamboo skewers (4-6 inches long)

Instructions:

  1. Prepare the Ingredients:
    • Wash and dry the cherry tomatoes and basil leaves.
    • Drain the fresh mozzarella balls.
  2. Assemble the Skewers:
    • Thread a cherry tomato onto a skewer.
    • Follow with a basil leaf, folding it in half if it’s large.
    • Add a mozzarella ball.
    • Repeat this pattern (tomato, basil, mozzarella) until the skewer is full, leaving a little space at the end for handling. Aim to have 2-3 sets per skewer depending on their length.
    • Repeat the process for all skewers.
  3. Season and Dress:
    • Arrange the skewers on a serving platter.
    • Drizzle with extra virgin olive oil.
    • Drizzle with balsamic glaze.
    • Sprinkle with a pinch of salt and freshly ground black pepper.
  4. Serve:
    • Serve immediately or refrigerate until ready to serve. These skewers are best served fresh.
