Caprese Chicken Skillet is a simple yet elegant summer dinner that showcases the classic Italian flavors of tomatoes, basil, and mozzarella. This one-pan dish is quick to make and perfect for a weeknight dinner.
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 pint cherry tomatoes, halved
- 1/4 cup balsamic vinegar
- 1 cup fresh mozzarella, sliced
- Fresh basil leaves, for garnish
Instructions:
- Season the chicken breasts with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6-7 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the minced garlic and cherry tomatoes. Cook for 2-3 minutes until the tomatoes begin to soften.
