Broccoli Cheese Soup

Ingredients:

  • 4 cups broccoli florets
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions:

  1. In a large pot, melt butter over medium heat and sauté onion and garlic until fragrant.
  2. Add broccoli florets and chicken broth, bring to a boil, then reduce heat and simmer until broccoli is tender.
  3. Using an immersion blender, puree the soup until smooth.
  4. Stir in heavy cream and shredded cheddar cheese until melted and well combined.
  5. Season with salt and pepper and serve hot.
