Ingredients:
- 4 cups broccoli florets
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 2 tbsp butter
- Salt and pepper to taste
Instructions:
- In a large pot, melt butter over medium heat and sauté onion and garlic until fragrant.
- Add broccoli florets and chicken broth, bring to a boil, then reduce heat and simmer until broccoli is tender.
- Using an immersion blender, puree the soup until smooth.
- Stir in heavy cream and shredded cheddar cheese until melted and well combined.
- Season with salt and pepper and serve hot.
