Gluten-Free Pancakes

Ingredients:

  • 1 cup gluten-free all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Batter: In a large bowl, whisk together the gluten-free flour, sugar, baking powder, baking soda, and salt.
  2. Combine Wet Ingredients: In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.
  3. Mix Together: Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Cook the Pancakes: Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  5. Serve: Serve hot with your favorite toppings.
