KETO Cauliflower Fried Rice

Ingredients:

  • 1 medium head of cauliflower, riced
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (peas, carrots, and green beans)
  • 2 large eggs, beaten
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions:

  1. Rice the Cauliflower: Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
  2. Cook the Vegetables: Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for another minute.
  3. Add the Cauliflower: Add the riced cauliflower and mixed vegetables to the skillet. Cook for about 5-7 minutes until the vegetables are tender.
  4. Scramble the Eggs: Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix them with the vegetables.
  5. Season and Serve: Stir in the soy sauce and sesame oil. Season with salt and pepper to taste. Garnish with chopped green onions before serving.
