KETO Cheeseburger Casserole

Ingredients:

  • 1 lb (450g) ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 2 large eggs
  • 2 tablespoons tomato paste
  • 1 tablespoon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1 tablespoon olive oil

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil.
  2. Cook the Beef: In a large skillet, cook the ground beef over medium heat until browned. Add the diced onion and minced garlic, and cook until the onion is translucent.
  3. Prepare the Casserole: In a medium bowl, whisk together the heavy cream, eggs, tomato paste, mustard, salt, pepper, paprika, onion powder, and garlic powder. Add the cooked beef mixture and 3/4 cup of shredded cheddar cheese. Stir to combine.
  4. Bake: Pour the mixture into the prepared baking dish. Top with the remaining 1/4 cup of shredded cheddar cheese. Bake for 25-30 minutes or until the casserole is set and the cheese is bubbly and golden.
  5. Serve: Let the casserole cool slightly before serving. Garnish with fresh parsley if desired.
