Chicken and Vegetable Skewers

Ingredients:

  • 2 chicken breasts, cut into cubes
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, sliced
  • 1 red onion, cut into chunks
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Wooden skewers (soaked in water for 30 minutes)

How to Prepare:

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper.
  3. Thread chicken and vegetables onto the skewers. Brush with the marinade.
  4. Grill the skewers for 10-12 minutes, turning occasionally, until chicken is cooked through.
  5. Serve hot with a side of your choice.
