Greek Quinoa Salad

Greek Quinoa Salad is a refreshing and nutritious dish that’s perfect for a summer dinner. Packed with colorful vegetables, protein-rich quinoa, and a zesty lemon dressing, this salad is both satisfying and full of Mediterranean flavors.

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped

For the Dressing:

  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions:

  1. In a medium saucepan, bring the quinoa and water to a boil. Reduce the heat, cover, and simmer for about 15 minutes, or until the quinoa is cooked and the water is absorbed. Let it cool slightly.
  2. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and parsley.
  3. In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Serve chilled or at room temperature.
