Caprese Chicken Skillet

Caprese Chicken Skillet is a simple yet elegant summer dinner that showcases the classic Italian flavors of tomatoes, basil, and mozzarella. This one-pan dish is quick to make and perfect for a weeknight dinner.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 pint cherry tomatoes, halved
  • 1/4 cup balsamic vinegar
  • 1 cup fresh mozzarella, sliced
  • Fresh basil leaves, for garnish

Instructions:

  1. Season the chicken breasts with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6-7 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add the minced garlic and cherry tomatoes. Cook for 2-3 minutes until the tomatoes begin to soften.
  4. Add the balsamic vinegar to the skillet and bring to a simmer. Cook for an additional 2 minutes.
  5. Return the chicken to the skillet and top each breast with a slice of fresh mozzarella. Cover the skillet and cook until the cheese is melted, about 2 minutes.
  6. Garnish with fresh basil leaves and serve immediately.
