Ingredients:
- 1 lb large shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 8 small corn tortillas
For the Mango Salsa:
- 1 ripe mango, diced
- 1/4 red onion, finely chopped
- 1 jalapeño, seeded and finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt to taste
Instructions:
- Preheat your grill to medium-high heat.
- In a bowl, toss the shrimp with olive oil, chili powder, cumin, garlic powder, salt, and pepper until well coated.
- Thread the shrimp onto skewers and grill for 2-3 minutes per side, or until opaque and cooked through.
