Grilled Shrimp Tacos with Mango Salsa

Grilled Shrimp Tacos with Mango Salsa are perfect for a light and refreshing summer dinner. These tacos combine succulent shrimp with a vibrant and tangy mango salsa, creating a delightful balance of flavors that’s sure to impress.

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 8 small corn tortillas

For the Mango Salsa:

  • 1 ripe mango, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeded and finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt to taste

Instructions:

  1. Preheat your grill to medium-high heat.
  2. In a bowl, toss the shrimp with olive oil, chili powder, cumin, garlic powder, salt, and pepper until well coated.
  3. Thread the shrimp onto skewers and grill for 2-3 minutes per side, or until opaque and cooked through.
  4. While the shrimp is grilling, prepare the mango salsa by combining the diced mango, red onion, jalapeño, cilantro, lime juice, and salt in a bowl. Mix well.
  5. Warm the tortillas on the grill for about 30 seconds on each side.
  6. Assemble the tacos by placing a few grilled shrimp on each tortilla and topping with mango salsa.
  7. Serve immediately with extra lime wedges on the side.
