Grilled Lemon Herb Chicken is a versatile and healthy dinner option that’s packed with flavor. Perfect for summer evenings, this dish combines the zesty freshness of lemon with aromatic herbs to create a succulent and juicy chicken meal.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 lemons, juiced and zested
  • 3 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions:

  1. In a large bowl, whisk together the olive oil, lemon juice and zest, garlic, rosemary, thyme, salt, and pepper.
  2. Add the chicken breasts to the marinade, making sure they are well coated. Cover and refrigerate for at least 30 minutes, preferably up to 2 hours.
  3. Preheat the grill to medium-high heat. Oil the grates to prevent sticking.
  4. Grill the chicken breasts for 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink in the center.
  5. Remove from the grill and let rest for a few minutes before serving.
  6. Serve the chicken with lemon wedges and a side of your favorite vegetables or salad.
