Ingredients:
- 200g spaghetti
- 100g pancetta or guanciale, diced
- 2 large eggs
- 50g Pecorino Romano cheese, grated
- 50g Parmesan cheese, grated
- 2 cloves garlic, crushed
- Salt and freshly ground black pepper
- Fresh parsley, chopped (optional)
Instructions:
- Cook the spaghetti according to the package instructions in a large pot of salted boiling water until al dente.
- While the spaghetti is cooking, heat a large skillet over medium heat and add the pancetta. Cook until the pancetta is crispy, about 5-7 minutes. Add the garlic and cook for an additional minute, then remove from heat.
