Spaghetti Carbonara

Ingredients:

  • 12 oz spaghetti
  • 4 oz pancetta, diced
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook spaghetti according to package instructions.
  2. In a skillet, cook pancetta until crispy, then add minced garlic.
  3. In a bowl, whisk eggs and Parmesan cheese together.
  4. Drain the pasta, reserving some pasta water.
  5. Combine hot pasta with pancetta, then remove from heat and quickly mix in egg mixture, adding reserved pasta water to reach desired consistency.
  6. Season with salt and pepper, garnish with parsley, and serve.
