Ingredients:
- 4 bell peppers, tops cut off and seeds removed
- 1 lb ground turkey
- 1 cup cooked quinoa
- 1 can diced tomatoes
- 1 tsp dried oregano
- 1/2 cup shredded mozzarella cheese
- Salt and pepper to taste
Instructions:
- Preheat oven to 375°F (190°C).
- Cook ground turkey in a skillet until browned.
- In a bowl, combine cooked turkey, quinoa, diced tomatoes, and oregano. Season with salt and pepper.
- Stuff each bell pepper with the turkey mixture.
- Place peppers in a baking dish and top with shredded mozzarella cheese.
- Bake for 25-30 minutes until peppers are tender and cheese is melted
