Gluten-Free Stuffed Peppers

Ingredients:

  • 4 bell peppers, tops cut off and seeds removed
  • 1 lb ground turkey
  • 1 cup cooked quinoa
  • 1 can diced tomatoes
  • 1 tsp dried oregano
  • 1/2 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Cook ground turkey in a skillet until browned.
  3. In a bowl, combine cooked turkey, quinoa, diced tomatoes, and oregano. Season with salt and pepper.
  4. Stuff each bell pepper with the turkey mixture.
  5. Place peppers in a baking dish and top with shredded mozzarella cheese.
  6. Bake for 25-30 minutes until peppers are tender and cheese is melted
