Ingredients:
- 1 gluten-free pie crust
- 1 tbsp olive oil
- 1/2 cup diced onion
- 1 clove garlic, minced
- 4 cups fresh spinach
- 4 eggs
- 1 cup milk
- 1/2 cup crumbled feta cheese
- Salt and pepper to taste
Instructions:
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil and sauté onion and garlic until soft.
- Add spinach and cook until wilted.
- In a bowl, whisk eggs and milk together. Stir in spinach mixture and feta cheese.
- Season with salt and pepper.
- Pour mixture into the gluten-free pie crust.
- Bake for 35-40 minutes until set.
- Let cool slightly before serving.
