Gluten-Free Spinach and Feta Quiche

Ingredients:

  • 1 gluten-free pie crust
  • 1 tbsp olive oil
  • 1/2 cup diced onion
  • 1 clove garlic, minced
  • 4 cups fresh spinach
  • 4 eggs
  • 1 cup milk
  • 1/2 cup crumbled feta cheese
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté onion and garlic until soft.
  3. Add spinach and cook until wilted.
  4. In a bowl, whisk eggs and milk together. Stir in spinach mixture and feta cheese.
  5. Season with salt and pepper.
  6. Pour mixture into the gluten-free pie crust.
  7. Bake for 35-40 minutes until set.
  8. Let cool slightly before serving.
