Ingredients:

  • 1 lb boneless, skinless chicken breasts, sliced into thin strips
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil or sesame oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large carrot, julienned
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1-inch piece of fresh ginger, minced
  • 3 green onions, sliced
  • Cooked rice or noodles (for serving)

Optional Sauce:

  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch mixed with 1/4 cup water

Instructions:

  1. Marinate the Chicken:
    • In a bowl, combine the soy sauce, oyster sauce, hoisin sauce, and cornstarch.
    • Add the sliced chicken and toss to coat. Let it marinate for at least 15 minutes.
  2. Prepare the Vegetables:
    • Wash and slice the bell peppers, julienne the carrot, and cut the broccoli into florets. Slice the green onions and snap peas.
  3. Stir-Fry the Chicken:
    • Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
    • Add the marinated chicken and stir-fry until it’s cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  4. Stir-Fry the Vegetables:
    • In the same skillet, add the remaining tablespoon of oil.
    • Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
    • Add the bell peppers, carrot, broccoli, and snap peas. Stir-fry for about 5 minutes, until the vegetables are tender-crisp.
  5. Combine Chicken and Vegetables:
    • Return the cooked chicken to the skillet with the vegetables.
    • If using the optional sauce, whisk together the soy sauce, oyster sauce, hoisin sauce, rice vinegar, and cornstarch mixture in a small bowl. Pour the sauce into the skillet and stir to coat everything evenly.
    • Cook for another 2-3 minutes, until the sauce has thickened and everything is heated through.
  6. Serve:
    • Remove from heat and garnish with sliced green onions.
    • Serve the stir-fry over cooked rice or noodles.

Tips:

  • For extra flavor, you can add a splash of sesame oil or sprinkle sesame seeds on top before serving.
  • Feel free to add other vegetables like mushrooms, zucchini, or baby corn.
  • For a spicy kick, add a pinch of red pepper flakes or a drizzle of sriracha.
