Peach Cobbler Recipe

Ingredients:

For the filling:

  • 6-8 fresh peaches, peeled, pitted, and sliced (about 6 cups)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon lemon juice
  • 2 teaspoons cornstarch

For the topping:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, cold and cut into small pieces
  • 1/4 cup boiling water

For the cinnamon sugar topping:

  • 3 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions:

  1. Preheat the oven:
    • Preheat your oven to 425°F (220°C).
  2. Prepare the filling:
    • In a large bowl, combine the sliced peaches, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat the peaches evenly. Let the mixture sit for a few minutes to allow the peaches to release their juices.
    • Pour the peach mixture into a 9×13-inch baking dish.
  3. Make the topping:
    • In a medium bowl, combine the flour, granulated sugar, brown sugar, baking powder, and salt.
    • Add the cold butter pieces and use a pastry cutter or your fingers to cut in the butter until the mixture resembles coarse crumbs.
    • Stir in the boiling water until just combined. The dough will be quite sticky.
  4. Assemble the cobbler:
    • Drop spoonfuls of the topping over the peaches in the baking dish. It’s okay if the topping doesn’t cover all the peaches; it will spread as it bakes.
    • In a small bowl, mix together the granulated sugar and ground cinnamon for the cinnamon sugar topping. Sprinkle this mixture evenly over the dough.
  5. Bake the cobbler:
    • Bake in the preheated oven for about 30-35 minutes, or until the topping is golden brown and the peaches are bubbly.
    • If the topping is browning too quickly, you can cover the dish loosely with aluminum foil.
  6. Cool and serve:
    • Let the cobbler cool for a few minutes before serving. It’s delicious on its own, but even better with a scoop of vanilla ice cream or a dollop of whipped cream.

Enjoy your homemade peach cobbler!
