Ingredients:

  • 1 large whole wheat tortilla or wrap
  • 1/4 cup hummus (store-bought or homemade)
  • 1/2 cucumber, sliced into thin strips
  • 1/2 red bell pepper, sliced into thin strips
  • 1/2 yellow bell pepper, sliced into thin strips
  • 1 carrot, peeled and julienned
  • A handful of baby spinach or mixed greens
  • 1 small avocado, sliced
  • 1/4 cup shredded purple cabbage (optional)
  • Salt and pepper to taste
  • Lemon juice (optional)

Instructions:

  1. Prepare the Vegetables:
    • Wash and slice the cucumber, bell peppers, carrot, and avocado.
    • Wash and pat dry the spinach or mixed greens.
    • Shred the purple cabbage if using.
  2. Assemble the Wrap:
    • Lay the tortilla or wrap flat on a clean surface.
    • Spread the hummus evenly over the tortilla, leaving about an inch around the edges.
    • Layer the spinach or mixed greens on top of the hummus.
    • Arrange the cucumber, bell peppers, carrot, avocado, and shredded cabbage (if using) on top of the greens.
    • Season with a pinch of salt and pepper, and a squeeze of lemon juice if desired.
  3. Wrap It Up:
    • Fold in the sides of the tortilla, then roll it up tightly from the bottom to the top, making sure to keep all the fillings inside.
  4. Serve:
    • Cut the wrap in half if desired and serve immediately.
