Buffalo cauliflower bites are a delicious and healthier alternative to traditional buffalo wings. Here’s a simple recipe to make them:

Ingredients

  • 1 medium head of cauliflower, cut into bite-sized florets
  • 1 cup all-purpose flour (or a gluten-free alternative)
  • 1 cup water
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup buffalo sauce
  • 2 tablespoons melted butter (optional for a richer flavor)

Instructions

  1. Preheat Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper or lightly grease it.
  2. Prepare Batter: In a large bowl, whisk together the flour, water, garlic powder, onion powder, paprika, salt, and black pepper until smooth.
  3. Coat Cauliflower: Add the cauliflower florets to the batter, ensuring each piece is well-coated. Allow any excess batter to drip off before placing the florets on the prepared baking sheet.
  4. Bake: Arrange the coated cauliflower florets in a single layer on the baking sheet. Bake in the preheated oven for 20-25 minutes, or until the cauliflower is crispy and golden brown, flipping halfway through.
  5. Prepare Buffalo Sauce: While the cauliflower is baking, mix the buffalo sauce and melted butter (if using) in a large bowl.
  6. Coat with Sauce: Once the cauliflower is done baking, remove it from the oven and add the florets to the bowl with the buffalo sauce. Toss gently to coat each piece evenly.
  7. Bake Again: Return the coated cauliflower to the baking sheet and bake for an additional 10-15 minutes, or until the sauce has thickened and the bites are crispy.
  8. Serve: Remove from the oven and let cool slightly before serving. Serve with your favorite dipping sauces, such as ranch or blue cheese dressing, and enjoy!

Tips

  • Air Fryer: For an even crispier texture, you can cook the cauliflower bites in an air fryer at 400°F (200°C) for about 15-20 minutes, shaking the basket halfway through.
  • Spiciness: Adjust the spiciness by choosing a milder or hotter buffalo sauce according to your preference.
  • Gluten-Free: Use a gluten-free flour blend to make this recipe gluten-free.

These buffalo cauliflower bites are perfect as an appetizer, snack, or even a main dish when paired with a salad or other side dishes. Enjoy!
