Bruschetta

Here’s a classic recipe for Bruschetta:

Ingredients:

  • 1 baguette or Italian bread, sliced into 1/2 inch thick slices
  • 4-5 ripe tomatoes, diced
  • 1/4 cup fresh basil leaves, chopped
  • 3 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 clove garlic, halved (for rubbing on the bread)

Instructions:

  1. Prepare the Tomato Topping:
    • In a medium bowl, combine the diced tomatoes, chopped basil, minced garlic, olive oil, balsamic vinegar, salt, and pepper. Mix well and let it sit for about 15-20 minutes to allow the flavors to meld.
  2. Prepare the Bread:
    • Preheat your oven to 400°F (200°C).
    • Arrange the bread slices on a baking sheet in a single layer.
    • Toast the bread in the preheated oven for about 5-7 minutes, or until the bread is golden brown and crispy.
    • Remove from the oven and let cool slightly.
  3. Rub with Garlic:
    • Once the bread is cool enough to handle, take the halved garlic clove and gently rub the cut side on the top of each toasted bread slice. This adds a lovely garlic flavor without being overpowering.
  4. Assemble the Bruschetta:
    • Spoon the tomato mixture onto each slice of toasted bread, making sure to include some of the liquid for added flavor.
    • If desired, sprinkle a small amount of grated Parmesan cheese on top of each bruschetta.
  5. Serve:
    • Arrange the bruschetta on a serving platter and serve immediately.
