Stuffed Mushrooms

Here’s a delicious recipe for Stuffed Mushrooms:

Ingredients:

  • 20 large white mushrooms
  • 1/4 cup olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup cream cheese, softened
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 1/4 cup shredded mozzarella cheese (optional, for topping)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Mushrooms:
    • Clean the mushrooms with a damp paper towel and remove the stems. Set the mushroom caps aside.
    • Finely chop the mushroom stems.
  3. Cook the Filling:
    • In a large skillet, heat the olive oil over medium heat.
    • Add the chopped onion and cook until soft and translucent, about 5 minutes.
    • Add the minced garlic and chopped mushroom stems and cook for another 3-4 minutes, until the mushroom stems are tender.
    • Remove the skillet from heat and let it cool slightly.
  4. Mix the Stuffing:
    • In a large bowl, combine the cooked onion, garlic, and mushroom stems with the breadcrumbs, Parmesan cheese, cream cheese, chopped parsley, thyme, salt, and pepper. Mix until well combined.
  5. Stuff the Mushrooms:
    • Using a small spoon, fill each mushroom cap with the stuffing mixture, pressing gently to pack it in.
    • Place the stuffed mushrooms on a baking sheet.
    • If using, sprinkle a little shredded mozzarella cheese on top of each stuffed mushroom.
  6. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the stuffing is golden brown.
  7. Serve:
    • Remove from the oven and let the stuffed mushrooms cool for a few minutes before serving.
    • Garnish with additional fresh herbs if desired.
