Avocado Toast with Poached Egg

Ingredients:

  • 2 slices whole grain bread
  • 1 ripe avocado
  • 2 eggs
  • Salt and pepper to taste
  • Optional toppings: red pepper flakes, sliced tomatoes, feta cheese

Instructions:

  1. Toast Bread: Toast the slices of whole grain bread until golden brown.
  2. Prepare Avocado: Mash the ripe avocado in a bowl and season with salt and pepper.
  3. Poach Eggs: Bring a pot of water to a gentle simmer. Crack eggs into separate small bowls. Carefully slide each egg into the simmering water. Poach for 3-4 minutes until the whites are set but the yolks are still runny.
  4. Assemble: Spread mashed avocado evenly onto the toasted bread slices. Carefully remove poached eggs from the water using a slotted spoon and place one egg on each toast.
  5. Season and Serve: Season with additional salt and pepper as desired. Add optional toppings like red pepper flakes, sliced tomatoes, or crumbled feta cheese. Serve immediately.
