Quinoa Veggie Buddha Bowl

Ingredients:

For the quinoa:

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • Salt to taste

For the roasted vegetables:

  • 2 cups mixed vegetables (such as bell peppers, zucchini, carrots, and broccoli), chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried herbs (such as thyme or rosemary), optional

For the toppings:

  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup hummus
  • Fresh lemon wedges, for serving

For the dressing:

  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 2-4 tablespoons water, as needed
  • Salt and pepper to taste

Instructions:

  1. Cook Quinoa:
    • Rinse the quinoa under cold water using a fine mesh strainer. In a medium saucepan, combine the rinsed quinoa and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the liquid is absorbed and the quinoa is fluffy. Remove from heat and let it cool slightly.
  2. Preheat Oven:
    • Preheat your oven to 400°F (200°C).
  3. Prepare Roasted Vegetables:
    • In a large mixing bowl, toss the chopped mixed vegetables with olive oil, salt, pepper, and dried herbs (if using) until evenly coated. Spread the vegetables in a single layer on a baking sheet lined with parchment paper.
  4. Roast Vegetables:
    • Roast the vegetables in the preheated oven for 20-25 minutes, or until they are tender and lightly browned, stirring halfway through cooking.
  5. Make Tahini Dressing:
    • In a small bowl, whisk together the tahini, lemon juice, minced garlic, and water until smooth and creamy. Add more water as needed to achieve your desired consistency. Season with salt and pepper to taste.
  6. Assemble Buddha Bowls:
    • Divide the cooked quinoa among serving bowls. Top each bowl with roasted vegetables, sliced avocado, cherry tomatoes, and a dollop of hummus.
  7. Serve:
    • Drizzle the tahini dressing over the Buddha bowls. Serve with fresh lemon wedges on the side for squeezing over the bowls before eating.
